1 handful spinach
1 handful mustard and cress
1 handful sliced lettuce hearts
3-4 borage leaves
12 chives
salt
pepper
5 tablespoons flour
2 eggs
enough milk to make a batter to the consistency of thick cream
(see measure conversions for more information)
- Boil for 2 to 3 minutes and drain.
- Place in a buttered oven proof dish and season well with salt and pepper.
- Make a batter with the flour, eggs and milk.
- Pour over the herbs in the dish.
- Stir well.
- Bake in a moderate oven for about 1 hour.

How to make Cornish herby pie:
This is a very ancient idea. Potages and puddings were made using handfuls of herbs in the wider sense of the word as the main ingredients. The herbs are simply set in a baked batter.
Ingredients
2 handfuls parsley leaves1 handful spinach
1 handful mustard and cress
