3oz sultanas
3oz currants
2oz lemon peel
8oz butter cut into small pieces
4oz lard cut into small pieces
pinch of salt
water to mix
a little milk for brushing
(see measure conversions for more information)
- Add the butter and lard.
- Add a little water.
- Mix together to form a dough.
- Turn onto a floured surface and roll into an oblong.
- Allow to rest in fridge for 10 minutes.
- Roll out on a floured surface to a thickness of about 1/4 inch.
- Brush with a little milk.
- Bake on a well-greased baking tray at about 180 degrees C. for 3/4 of an hour.

A very famous Cornish cake which is really more of a rich, fruity pastry than a raised cake. Heavy Cake is really delicious especially served with jam and clotted cream.Ingredients
1lb flour3oz sultanas
