How to make Cornish Heavy Cake:
A very famous Cornish cake which is really more of a rich, fruity pastry than a raised cake. Heavy Cake is really delicious especially served with jam and clotted cream.

Ingredients

1lb flour
3oz sultanas
3oz currants
2oz lemon peel
8oz butter cut into small pieces
4oz lard cut into small pieces
pinch of salt
water to mix
a little milk for brushing

Method

- Mix the flour, fruit and salt together.
- Add the butter and lard.
- Add a little water.
- Mix together to form a dough.
- Turn onto a floured surface and roll into an oblong.
- Allow to rest in fridge for 10 minutes.
- Roll out on a floured surface to a thickness of about 1/4 inch.
- Brush with a little milk.
- Bake on a well-greased baking tray at about 180 degrees C. for 3/4 of an hour.

Problems with black currant jelly


Hello everybody,
I made some black currant jelly recently using two pans. One pan produced excellent results, 8lb of nice firm jelly. The other pan's contents, of around 7lb, have not set. Both pans were treated identically. I have looked through my collection of cookery books and found no help, does anyone know of any way of rescuing this jelly as it goes against the grain to ditch it?
