How to make Cornish fried herring:
Served hot and crispy, this is a favorite way of preparing the most popular fish in Cornwall!





Ingredients

4 large herrings, cleaned and filleted
flour
salt
pepper
lard
lemon
(see measure conversions for more information)

Method

- Roll the fish and any roes in the flour mixed with the salt and pepper.
- Melt the lard in a large frying pan.
- When the lard is hot fry the fish and the roe until crispy and golden.
- Serve with lemon.
