How to make Cornish Christmas pudding:
An exceptionally rich and delicious traditional Christmas pudding from Cornwall.



Ingredients

2 cups flour
2 cups breadcrumbs
2 cups suet
2 1/2 cups brown sugar
1 1/2 cups sultanas
1 cup raisins
2 cups candied peel
1/2 cup orange marmalade
1 1/2 cups currants
1/2 cup blanched, chopped almonds
1/2 cup glace cherries
grated rind of 2 lemons
juice of 1 lemon
1 teaspoon mixed spices
1 teaspoon salt
6 large eggs
1 glass of Stout
1/2 teaspoon bicarbonate of soda
(see measure conversions for more information)

Method

- Mix all the ingredients together, omitting the stout and bicarbonate of soda.
- Cover and leave overnight.
- Next day mix again thoroughly.
- Put the stout and the bicarbonate of soda into a saucepan and heat until it froths up.
- Add to the other ingredients to make a stiff mixture.
- Put into well-greased basins (enough for about three 2-pint pudding basins).
- Steam for 8 hours and then on Christmas Day steam for a further 2 hours.
- Serve with clotted cream.

Land For Food Production


I wonder just how much land it would take to feed a family of, say, 4? I know that if my family didn't buy fruit and veg we wouldn't have enough to eat but is self sufficiency down to amount of land or method of growing? Last year I overcrowded my small veg plot with counter-productive results like mildew and snail infestation that went unnoticed until we came to pick the tomatoes (all holes!). I wonder if anyone has ever been totally self providing or whether the local market and barter played...
