a few shallots, peeled and chopped
1/2 pint ale
1/2 pint vinegar
2 bay leaves
salt and pepper
1 teaspoon ground cloves
1 teaspoon allspice
(see measure conversions for more information)
- Sprinkle the spice, salt and pepper over the fish.
- Drop the shallots around the fish.
- Pour the vinegar and ale over the fish.
- Add the bay leaves.
- Cover the dish and bake at 160 degrees centigrade (see temperature conversions) for about 60 minutes.

How to make Cornish baked herring:
Always a popular and easily available fish in Cornwall, herring can be used in may ways. Here it provides the basis for a substantial and spicy main meal.
Ingredients
4 good sized herrings, cleaned and filleteda few shallots, peeled and chopped
1/2 pint ale
1/2 pint vinegar
2 bay leaves
salt and pepper

Method
- Put the fish into a lidded, ovenproof dish.- Sprinkle the spice, salt and pepper over the fish.
- Drop the shallots around the fish.
- Pour the vinegar and ale over the fish.
- Add the bay leaves.
- Cover the dish and bake at 160 degrees centigrade (see temperature conversions) for about 60 minutes.
