How to make Cornish apple pie:
This recipe makes a delicious cold dessert. It would have been made in the autumn when the apples were harvested and possibly throughout the winter using stored, dried or bottled apples.


enough shortcrust pastry to line a large pie dish and make a lid
brown sugar
6 large cooking apples, peeled, cored and sliced
a few cloves
2 tablespoons raisins
clotted cream
(see measure conversions for more information)


- Line a well greased pie dish with about two thirds of the pastry.
- Fill the pastry case with the sliced apples and raisins.
- Sprinkle with sugar.
- Add the cloves.
- Put a pastry lid over the filling.
- Cook at 170 degrees centigrade (see temperature conversions) for 45 minutes.
- When completely cold, carefully remove the pastry lid and spoon clotted cream over the filling.
- Replace the lid and serve with extra brown sugar.
