2 cups currants
1 1/2 teaspoons ginger
3 tablespoons peel
8 tablespoons butter
1 1/2 teaspoons ground cinnamon
2 eggs
1 teaspoon baking powder
1 cup of warm milk
(see measure conversions for more information)
- Cream the butter into the flour.
- Mix in the dry ingredients with the butter and flour.
- Beat the eggs and mix into the flour and butter using a wooden spoon.
- Add the milk mixture.
- Beat well.
- Bake for 2 1/2 to 3 hours in a slow oven.

Thank you for your saffron cake recipe. It will be a surprise for my Cornish son for his 43rd birthday tomorrow. I am a New Zealander that was once married to a Cornishman. My dear Penzance mother-in-law was a marvel in her kitchen and I learnt much about thrift and 'come here my handsome, my robin.'And also how to make a prpoer Cornish pasty. I made them for 24years every Thursday. Everyone came home early that night drawn by the most wonderful aroma. You can't beat homecooking. Kind regards Diana
