Mulled wine is one of my favourite Christmas treats - there's nothing quite like its warming spiciness. Christmas spirit in a glass! In the past I have experimented with different spices and quantities and the recipe below is just about perfect for my taste. The best piece of advice I can give is to use a nice wine! If the wine is horrible then nothing else will salvage the mulled wine! If you want to make an alcohol-free version of mulled wine you can replace the wine with a blackcurrant cordial, grape juice or any other fruit juice (although I've not tried this myself).

  • 1/2 pint water
  • 3 tablespoons sugar
  • pinch of cinnamon
  • pinch of powdered ginger
  • pinch of powdered cloves
  • 1 pint red wine
  • orange peel
(see measure conversions for more information on quantites)

  1. Put the sugar and water together in a saucepan and add the spices.
  2. Boil to a syrup.
  3. Leave the syrup to cool a little.
  4. Add the wine and heat to just below boiling, stirring all the time.
  5. Serve hot with a twist of orange peel (white pith removed) in each glass.
