1 cup (8oz) suet
1 carrot, grated
1 cup grated apple
4 cups mixed, dried fruit
1 teaspoon ground nutmeg
2 teaspoons cream tartar
1 cup flour
1 cup sugar
2 eggs
1 cup milk
1 teaspoon bicarbonate of soda
1 glass sherry
(see measure conversions for more information)
- Steam for 8 hours in basins.
- Serve with caster/superfine sugar, brandy butter, Cumberland rum butter or cream (clotted or double).

How to make Christmas pudding:
The traditional dessert for the Christmas meal. The concept of the Christmas pudding harks back to the ancient use of spices and dried fruits in meat dishes, the suet being the vestiges of the meat content. Ingredients
1 cup (4oz) breadcrumbs1 cup (8oz) suet
1 carrot, grated
1 cup grated apple
4 cups mixed, dried fruit
1 teaspoon ground nutmeg
