Fleur pastry is a great choice when making sweet flans and pie - it's a particularly good alternative for shortcrust pastry.

Ingredients

  • 6oz flour
  • pinch salt
  • 3 1/2oz butter
  • 1oz caster/superfine sugar
  • yolk 1 egg
(see measure conversions for more information on quantites)

Method

  1. Rub the butter into the flour.
  2. Add the salt and sugar.
  3. Mix in the egg yolk.
  4. Work with hands until the dough is pliable.
  5. Roll out and use.
