How to make cornstarch/cornflour sauce:
This is a very easy and quick recipe and can be adapted to many different sauces both sweet and savory. Simply add fruit, jam/jelly or chocolate for sweet sauces or cheese, parsley, bread, onion etc. for savory sauces. This method avoids the more difficult method of making a roux based white sauce.



Ingredients

1/8 cup (1/2 oz) cornstarch/cornflour
1/2 pint cold milk
salt and pepper
(see measure conversions for more information)

- Put the cornstarch into a heat-proof basin.
- Add about 1 tablespoon of the cold milk.
- Blend the cornstarch into the milk using a wooden spoon.
- Make sure the mixture is smooth.
- Heat the remaining milk in a saucepan and bring it to the boil.
- Pour the hot milk gradually over the cornstarch mixture, stirring all the time.
- Put the mixture into a clean pan and put onto the heat.
- Bring it to the boil whilst stirring constantly.
- Boil gently, still stirring, for about 3 minutes.
- Stir in seasoning or chosen flavoring.

Land For Food Production


I wonder just how much land it would take to feed a family of, say, 4? I know that if my family didn't buy fruit and veg we wouldn't have enough to eat but is self sufficiency down to amount of land or method of growing? Last year I overcrowded my small veg plot with counter-productive results like mildew and snail infestation that went unnoticed until we came to pick the tomatoes (all holes!). I wonder if anyone has ever been totally self providing or whether the local market and barter played...
