What is a Bouquet Garni?
A bunch of assorted herbs used for seasoning casseroles, soup and stews. A Bouquet Garni usually consists of two or three sprigs of parsley, one sprig of thyme and one or two dried bay leaves. The constituents can vary according to the types of herb available locally. These can include rosemary, sage, savory, celery, leek and strips of orange zest. The herbs are usually tied in a bundle or put in a muslin bag. In both cases they are removed before the dish is served.
