Dainty, melt-in-the mouth patties stuffed full of mushrooms, cream cheese and flavoured with garlic. Easily prepared in advance and heated at the last minute.
1 onion, finely chopped
1 – 2 garlic cloves crushed
8oz button mushrooms, chopped
1 tablespoon chopped fresh thyme or 1 teaspoon dried
2oz cream cheese
pepper
6 sheets of frozen filo pastry, thawed
1oz butter, melted
(see measure conversions for more information)
- Add the mushrooms, thyme and pepper to taste.
- Cook for 5-6 minutes stirring all the time until all the juices have been absorbed.
- Add the cheese and stir until the cheese has melted.
- Leave to cool.
- Take a sheet of filo pastry and brush it with a little melted butter.
- Cut into two and a half inch squares.
- Place two squares together putting the top sheet diagonally across the bottom one forming a star shape.
- Put into a well-greased patty tin.
- Make up all the pastry into star-shaped cases.
- Put a little mushroom filling into each case.
- Bake at 200 degrees C. for 10-15 minutes.
