Hoping this slightly belated newsletter finds you well. We have now published our May Recipes Menu which we think offers some interesting flavours and combinations to try. Tewkesbury mustard is a delicious mustard from Gloucestershire that combines mustard flour and horseradish root. It should be available to buy online but if you can't get hold of it then your favourite mustard will do instead. Rhubarb is also in season now (in the Northern Hemisphere!) and, once sweetened with sugar or other sweeter fruits, makes a great dessert ingredient.
Mother's Day falls on the second Sunday in the US and Canada, so here's wishing all the mums out there a very special day! Check out the website for some ideas on food for that day.

This starter makes a change from prawn cocktail and tastes great.
1 cup crabmeat
1 tablespoon tomato puree
1 1/4 cup good mayonnaise
salt and pepper
3 avocados, peeled, stones removed, flesh cut into cubes
paprika
(see measure conversions for more information)
- Stir the tomato puree and the mayonnaise into the crabmeat.
- Add the hardboiled eggs.
- Season with the salt and pepper.
- Place the avocado cubes on serving dishes and spoon the crab mixture over.
- Sprinkle with the paprika.
- Chill until ready to serve.

Crab and Avocado Cocktail
This starter makes a change from prawn cocktail and tastes great.
Ingredients
4 eggs hardboiled, shelled and chopped.1 cup crabmeat
1 tablespoon tomato puree
1 1/4 cup good mayonnaise
salt and pepper
3 avocados, peeled, stones removed, flesh cut into cubes
paprika

Method
- Flake the crabmeat, removing and remove any little bits of shell etc.- Stir the tomato puree and the mayonnaise into the crabmeat.
- Add the hardboiled eggs.
- Season with the salt and pepper.
- Place the avocado cubes on serving dishes and spoon the crab mixture over.
- Sprinkle with the paprika.
- Chill until ready to serve.
